A recipe for fall.... I know, wishful thinking for a Texan, huh?

Crockpot Pumpkin Butter

1 fresh Pumpkin, roasted, peeled, and pureed.
1 1/2 Tablespoons cinnamon (more if you like)
1 teaspoon nutmeg
2 teaspoons cloves
1 teaspoon ginger
2 teaspoons lemon juice
1 1/2 to 2 cups packed brown sugar (or to your liking)

Directions:

Combine all ingredients in your crockpot, stirring until well mixed. Cover and turn on high for the first hour or so. After that, turn to low for another 4 hours or until it looks like it is thickening. Leave lid off at this point and cook and stir (every few minutes) until it has a nice thick and spreadable consistency.

Cool mixture. Place in pint size freezer jars or plastic containers and place in your freezer until needed.

I guarantee you are going to want some of this as soon as the first good cold front arrives in your area! It is exceptionally good served on 6-week bran and pecan muffins, which I will post next time!

Ooh! I'm sure it would, Stacy! I love agave nectar; it's the perfect sugar substitute and has worked great in every recipe I've tried.

I especially like the fact that it's God-made PLUS has a much lower glycemic index than even honey. It also doesn't "flavor" the recipe the way honey does: just gives it the sweetness you expect from sugar.

Great stuff, I say!!

I worked with Jim Bob at EDS years ago. Blake Moore got all us "phasers" connected again on Facebook! Anyway, I've seen your blog posts on Jim Bob's FB and this recipe looks awesome. Got all the ingredients for it - wondering if I have missed your next post for the pecan muffins - those sound great, too! Looking forward to that post! :)

This has nothing to do with pumpkin butter...

What T-Tapp video did you use? I have the Basic Workout Plus, which is the 15 min. workout plus hoedowns. I only got back to doing it after I read your testimony. This will be my second week. I'm hoping this one is enough, because like you, I also am a 40 y.o. homeschool mom of 4. There's just not enough time!!! : )
